Living in the UK, I couldn't get hold of the specified Graham's crackers but this was just fine as I had some homemade ginger biscuits in the freezer. The
re weren't quite enough so I also mixed in some bought shortbread biscuits.. yummm. They went really well with some rhubarb that also needed using up. I stewed the rhubarb with a bit of honey and added onto the pressed crust before covering it all with the super rich batter. This isn't just cheescake...

I have to ad
mit that this month's challenge was a joint effort with cycling mum's husband. A spare pair of hands was very welcome to do fiddly things like unwrapping the cheesecake. You've got to be careful with this baby!




This was declared 'the best cheescake my friend had EVER eaten'. That made me happy, I'm easily pleased.

You cheesecake looks great! I've never had rhubarb before and I think yours is the 4th post I've seen that used Rhubarb in the cheesecake! Well done!!!

Rhubarb is one of my favorite things to eat (we get it in abundance here in Sweden right now and all through summer), but it has never occurred to me to put it in a cheesecake. Must give that a try. And your friend is right - the cheesecake recipe for April's DB was the tastiest cheesecake ever!
